Located between the two Mâconnais villages of Viré and Clessé, Domaine Guillemot-Michel clearly neither aches to be ahead of the curve nor goes in much for market-led business plans; until 2014 Pierrette Michel and her husband Marc Guillemot- who have run the family estate organically since 1982 and biodynamically since 1991 – only made one, sole wine.
Even today the entire range numbers less than a handful, but it’s an inspirational, captivating, jewel of a collection. It includes a cuvée made from 65-year-old vines vinified in 800-litre terracotta amphora, a méthode ancestrale sparkling, plus eau-de-vie produced using old Burgundian stills heated by wood that’s cut and gathered from the local forest by the Guillemot-Michel family themselves.
