Clotilde Davenne came to the Chablis region in 1989, working with Jean-Marc Brocard. Shortly afterwards she began establishing her own label, Domaine des Temps Perdu, called after a lieu-dit in Préhy of that name, leaving Brocard in 2005 to devote herself full time to her own project. She now has 27 ha of vines, of which three quarters are around St Bris. Production is a mix of domaine and purchased grapes, enabling her to develop a range of 1ers and Grands Crus.
All her elegant white wines are vinified and raised in tank, while older barrels are kept for the red wines which are very tasty. Don’t ignore her crémants either.
