This important domaine, the property of the Abbaye de Pontigny from 1128 to the French Revolution, now belongs to Maison Albert Bichot of Beaune. When the heirs of the Long-Depaquits sold La Moutonne, four sold their shares to Bichot and one to Drouhin, but the Bichots now have full control. This vineyard is a case apart, consisting of 2.24 hectares of Vaudésir and 0.11 hectare of Preuses.

The 65 hectares are managed by Louis Gimmonet in succession to Matthieu Mangenot who has moved to Bichot HQ in Beaune. The straight Chablis is picked by machine, the rest by hand. The wines are made, matured and bottled on the property in Chablis rather than chez Bichot in Beaune.

La Moutonne is both vinified and matured in a mix of stainless steel tank (75%) and one to five year old barrels (25%), being racked entirely to tank after a year for a further six months ageing on fine lees before bottling. It is a wine which displays the exceptional weight you would expect from the steep south-facing slopes at the beginning of the valley of Vaudésir.
