In 1840, Jean Febvre, a cooper from Montbard, bought a company which specialised in the making of Sparkling Chablis. His daughter Mélanie married Amédée Simonnet, thus creating Simonnet-Febvre. Several generations later the family sold to Maison Louis Latour in 2003. I read that when the Latours had bought the Château de Corton Grancey in 1891 they had celebrated with Sparkling Chablis from Simonnet-Febvre.

Production has now moved from Chablis to Chitry and the company produces a range of wines from the Grand Auxerrois, the Coteaux de l’Auxois, and Crémant de Bourgogne as well as Chablis at all levels.
