Though the domaine is based in Fleys, Jean-Pierre Grossot’s mother came from Fontenay (hence the Fourchaume), and her parents from Beine (thus the Troëmes). Wines are also sold under Corinne Grossot’s maiden name of Perchaud. Their daughter, Eve, has been with them since 2007 and is increasingly in charge. The domaine was certified organic in 2015, obliged to drop out in 2016 when some non-organic treatments were needed, but re-certification was achieved in 2019. Harvesting is done both by hand and machine, while from 2018 they switched to using indigenous yeasts.

The great majority of wines are fermented and matured in stainless steel, though barrels (older wood) may be used for the more senior 1ers crus, being racked and blended in June for bottling at the end of the year. This is an excellent and consistent source of fine Chablis.
