The domaine is based at the Ferme des Carrières on the plateau above Fyé, just east of Chablis. The family are cereal farmers, but in 1999 Sébastien Christophe decided to start in on vineyards and wine production. He has now built the domaine up to 35 ha, including some 1ers crus which belong to various uncles and cousins – he does the farming and then buys the grapes. The domaine has moved away from herbicides and uses natural yeasts, and is en route towards organic certification. The wines are made in stainless steel supplemented by some barrels: 10-15% wood for the Chablis Vieilles Vignes and 20% for the 1ers crus.
