The vineyards come from the Naudet family and there is no connection with the many other Moreaus of Chablis. Stéphane Moreau-Naudet put this domaine on the map and now his widow Virginie continues his excellent work. They have 26 hectares in all, though the produce from younger vines and some less well-placed plots may be sold off in bulk.

The grapes intended for the domaine bottlings (some are sold off in bulk) are hand harvested and fermented with indigenous yeasts, with an elevage of up to 18 months: in stainless steel for the Petit Chablis and most of the Chablis, with one third of the crus (and Chablis vieilles vignes) aged in wood (four or more year old barrels).
