Thomas Pico has changed the name of his parents’ Domaine Bois d’Yver and indeed the methods of production. The new name refers to a plot of village Chablis near Montmain, which his grandfather first planted in 1954 and which Thomas has since developed much further.

On arrival at the domaine in 2005 Thomas immediately moved to organic production. He likes to pick later for ripeness and also is moving towards ever longer elevage. Some 2015s, including the Butteaux,  were still in tank when I visited in May 2018. There are barrels, tanks, eggs and amphorae, paintings, scrawled messages – this is a vibrant winery with lots to offer.
