Jean-François Bordet, whose vigneron ancestors stretch all the way back to 1590, has built himself a modern winery on the outskirts of Maligny where he makes Petit Chablis, Chablis and premier cru Fourchaume, supplemented by one or two négociant cuvées, such as grands crus Vaudésir and Preuses. This is a good source for clean, clear-cut Chablis.
