The domaine was created by this particular Bichot in 1995, after he left the family company, with vineyards in Beaune, Nuits-St-Georges, where the domaine is based, and Chablis. Domaine des Clos carries the subtitle of Ancienne Propriété du Couvent des Bernardins, though the Chablis bottlings are just labelled Grégoire Bichot to avoid any confusion with the grand cru Les Clos.

No herbicides or pesticides have been used from the start, with organic certification since 2012; and plans to move to biodynamic farming, which is already the case for the Chablis Vaillons. The two Chablis cuvées are vinified entirely in stainless steel, those from the Côte de Beaune are a mix of 30% new oak and 70% tank, subsequently blended. The reds are vinified in wooden vats, destemmed and punched down, then aged in up to 30% new wood.

In 2018 a small negociant structure was launched to buy grapes to make wines for a specific client, and from 2019 this operation has been slightly enlarged so that a few reds can be offered to the market in general, under the name of the three partners, Blouctet-Garnier-Bichot (Raphaël Blouctet, vineyards and winemaking, Florence Garnier, sales and marketing, and Grégoire Bichot himself.
