Based in Ligny-le-Chatel in the north of the region, the Garnier brothers, Xavier and Jérôme, have 5ha of Petit Chablis and 19 ha of Chablis, which will complete organic certification in 2024, supplemented by purchases of premier and grand cru grapes. The crus are picked by their own team, by hand, and aged over 18 to 24 months in demi-muids, while all wines are vinified with their native yeasts.
